It emphasizes the use of condiments and the importance of retaining the original flavors of the raw ingredients materials. Color, aroma, and tastes are the crucial elements in Shanghai cuisine. The dishes often appear shiny and appetizing. They are cooked using a variety of methods including braising and stewing. Originally, Sugar was an important seasoning in cooking Shanghai dishes. Adopting changes to the diet concern of modern Shanghainese, “Benbang” cuisine has paid special attention to low-sugar and low-fat food while maintaining the ultimate flavors of all dishes. Sugar is replaced with fermented rice wine that has a natural sweet flavor. Shanghai cuisine has become mellower and has a distinctive Jiangnan-styled flavor.
